Apple bread is one of my favorite sweet breads in the whole wide world.
Yes, I am partial to banana and pumpkin loaves, too, but there is just something special about a sweet big apple bread that gets my heart pounding. Maybe it’s because it reminds me of the apple orchard I used to go to as a young girl. I always loved going to this place. The smells of the cider and cinnamon doughnuts cooking were heavenly.Are there any childhood memories that come to mind when you think about food?
When I grow up and get married and have several children, I will bring them to the same apple orchard.
When my son was about three years old, he was eating apples and biting off small pieces of them before I could stop him. Luckily I knew the owner and she always laughed about it. I would buy apples and we would go home and make this bread.Sweet memories! I can’t believe how quickly the years go by!
INGREDIENTS:
- 3 cups flour
- 1 ½ cups sugar
- 3 teaspoons baking powder
- ½ teaspoon salt
- ¾ teaspoon apple pie spice
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla
- 2 tablespoons softened butter
- 1 ½ cups chopped apple peel
- Oil for frying
- Powdered sugar
Preparation:
Pour the oil into a pan or pot to a depth of about 3 inches. Preheat to 375 degrees. Sift flour, sugar, salt and apple pie spices into a large bowl. Place the eggs in a separate bowl and beat them lightly. Mix with milk and vanilla.Make a well in the center of the dry ingredients and pour in the milk mixture. Add the butter and beat with a mixer on low speed until moistened, about half a minute. S
Grease the sides of the bowl and increase the speed to medium for another 2 minutes. Add the apples. Dip a ¼ cup measuring cup into the hot oil.Be careful not to splash the oil on yourself. If the pan on top isn’t too big, you can only cook one at a time. When baking, the pancakes rise to the surface. When they are golden brown on one side, carefully turn them over to the other side using a spatula. Drain them on absorbent paper and immediately sprinkle generously with powdered sugar or icing, I prefer icing.To prepare the confectionery glaze, mix the sugar with milk or water and pour it in while it is still hot.
