Ingredients:

- 1 1/2 cups graham cracker crumbs or crushed digestive biscuits

- 1/2 cup powdered sugar
- 16 oz mascarpone cheese, room temperature
- 1 tsp vanilla extract
For the Coffee Soak:
- 1 cup strong brewed coffee, cooled
- 2 tbsp coffee liqueur (optional)
For the Topping:
- 1/4 cup unsweetened cocoa powder
- Whipped cream
- Fresh strawberries, for garnish
Instructions:
- Prepare the Base:
- Mix the graham cracker crumbs or crushed digestive biscuits with the melted butter until well combined.
- Press the mixture into the bottom of a 9×9 inch baking dish to form an even layer. Refrigerate while you prepare the other layers.
- Prepare the Caramel:
- In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a golden amber color.
- Carefully add the butter and stir until melted and combined.
- Slowly pour in the heavy cream while stirring continuously (be careful as the mixture will bubble up).
- Stir in the vanilla extract and a pinch of salt. Let the caramel cool slightly, then pour it over the chilled graham cracker base. Refrigerate until set.
- Prepare the Mascarpone Layer:
- In a large mixing bowl, beat the heavy cream with the powdered sugar until soft peaks form.
- In another bowl, mix the mascarpone cheese with the vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Spread the mascarpone mixture evenly over the caramel layer. Refrigerate while preparing the coffee soak.

- Mix the cooled brewed coffee with the coffee liqueur (if using).
- Lightly soak ladyfingers or sponge cake pieces in the coffee mixture and layer them over the mascarpone layer.
- Final Assembly:
- Sift the unsweetened cocoa powder over the top of the dessert.
- Refrigerate for at least 4 hours or overnight to let the flavors meld together.
