Moist Spice Cake with Raisins

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3 large eggs
  • 1 cup applesauce
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup raisins

For the Glaze:

  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Cake:
    • Preheat the oven to 350°F (175°C).
    • Grease and flour a 9-inch springform pan.
    • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
    • In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the applesauce, buttermilk, and vanilla extract until well combined.
    • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
    • Fold in the raisins.
    • Pour the batter into the prepared pan and smooth the top with a spatula.
  2. Bake the Cake:
    • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove from the oven and let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  3. Prepare the Glaze:
    • In a small saucepan, combine the brown sugar, butter, and heavy cream.
    • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
    • Boil for 1 minute, then remove from heat and stir in the vanilla extract.
    • Allow the glaze to cool slightly before pouring it over the cooled cake.
  4. Serve:
    • Pour the warm glaze over the cooled cake, allowing it to drip down the sides.
    • Let the glaze set before slicing and serving.
