Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.
- Add the warm water and olive oil to the dry ingredients and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Prepare the Filling:
- In a medium bowl, combine the shredded mozzarella, crumbled feta, shredded cheddar, and chopped parsley (if using). Mix well.
- Assemble the Flatbread:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 2 equal portions.
- Roll out one portion of dough on a lightly floured surface into a large circle, about 1/4 inch thick.
- Spread half of the cheese mixture evenly over the dough, leaving a small border around the edges.
