Ingredients
For the Dough:
- 1 egg
- 1 tea glass of oil
- 1 tea glass of milk
- 1 tea glass of water
- 1 packet of baking powder
- 2 teaspoons of salt
- 1 tablespoon of vinegar
- 4.5-5 cups of flour
For the Filling:
- 3-4 onions, finely chopped
- 2-3 tablespoons of oil
- 400 grams of ground beef
- Fresh parsley, chopped
- Salt
- Black pepper
- Thyme
- Red pepper flakes (Pul biber)
To Lubricate the Dough:
- 150-200 grams of butter, melted
For the Topping:
- 1 tablespoon of milk
- 1 egg yolk
Instructions
1. Prepare the Filling:
- In a pan, heat the oil and sauté the chopped onions until translucent.
- Add the ground beef and cook until it releases its juices.
- Stir in the spices (salt, black pepper, thyme, and red pepper flakes) and chopped parsley. Mix well and set aside to cool.
2. Make the Dough:
- In a large mixing bowl, combine the flour, salt, and baking powder.
- Add the egg, oil, milk, water, and vinegar. Mix until the dough is soft and pliable.
- Knead the dough thoroughly, ensuring all ingredients are well incorporated.
3. Prepare the Dough Layers:
- Divide the dough into four equal portions.
- Roll each portion out into a long, thin sheet using a rolling pin.
- Stack two sheets on top of each other, brushing the surface between them with melted butter.
- Repeat for the remaining two portions.
- Place the stacked dough sheets in the freezer for 30 minutes.
4. Shape the Dumplings:
- After 30 minutes, remove the dough from the freezer.
- Roll out each stacked dough sheet again to your desired thickness.
- Cut the dough into equal squares or rectangles.
- Place a spoonful of the filling onto each piece of dough.
- Fold the dough over the filling, pinching the edges to seal and shape them into bundles or dumplings.
5. Bake the Dumplings:
- Preheat your oven to 180°C (350°F).
- Line a baking sheet with parchment paper.
- Place the shaped dumplings on the prepared baking sheet.
- In a small bowl, whisk together the egg yolk and milk, then brush this mixture over the top of each dumpling.
- Bake in the preheated oven for 20-25 minutes, or until the dumplings are golden brown and puffed up.
6. Serve:
Allow the dumplings to cool slightly before serving.
