Make buttermilk pie
Preheat oven to 350 degrees F.
Beat the eggs until combined. Add sugar, butter and flour and beat until smooth.
Add buttermilk, lemon juice, vanilla and coconut and mix. Pour into bowl.
Bake for 40 to 60 minutes until set.
Remove from the oven and let it cool for 1 hour before serving.
Tip
If the edges of the cake brown quickly, cover the cake with foil for the remaining baking time.
You can tell your cake is cooked when the top is lightly browned and the center of the cake is still slightly chewy. It continues to harden as it cools. You can insert a toothpick into the middle and if it comes out mostly clean, your cake is ready.
