Baked Reuben Sandwiches
Ingredients:
- 8 slices of rye bread
 - 1 lb (450 g) corned beef, thinly sliced
 - 1 cup sauerkraut, drained and squeezed dry
 - 8 slices Swiss cheese (or more if you like it extra cheesy)
 - ¼ cup Thousand Island dressing (or Russian dressing)
 - 4 tbsp unsalted butter, softened
 
Instructions:
- Preheat the Oven:
 - Preheat your oven to 375°F (190°C).
 - Prepare the Bread:
 - Spread a thin layer of softened butter on one side of each slice of rye bread. This will help create a crispy, golden crust.
 - Assemble the Sandwiches:
 - Lay out 4 slices of bread, buttered side down, on a baking sheet.
 - Spread a generous layer of Thousand Island dressing on each slice.
 - Layer the sliced corned beef evenly on top of the dressing.
 - Add a layer of drained sauerkraut on top of the corned beef.
 - Place a slice of Swiss cheese over the sauerkraut.
 - Top with the remaining 4 slices of bread, buttered side up.
 - Bake the Sandwiches:
 - Place the baking sheet in the preheated oven.
 - Bake for about 10 minutes, or until the bread is golden brown and the cheese is melted.
 - Flip the sandwiches carefully and bake for an additional 5-7 minutes, or until the second side is also golden brown and crispy.
 - Serve:
 - Remove from the oven and let the sandwiches cool for a minute or two.
 - Slice in half and serve warm.
 
Optional:
- If you prefer a more “grilled” texture, you can use a panini press or grill the sandwiches in a skillet, pressing them down with a heavy pan or press, until they are golden and the cheese is melted.
