Ingredients
1. 6 cups rice or corn Chex cereal
2. 1 cup pecan halves
3. 1/2 cup unsalted butter
4. 1/2 cup light brown sugar
5. 1/4 cup light corn syrup or honey
6. 1/4 teaspoon baking soda
7. 1/2 teaspoon vanilla extract
8. Pinch of salt
Instructions
1. *Prepare the Mix*: In a large mixing bowl, combine the Chex cereal and pecans. Set aside.
2. *Make the Caramel Sauce*: In a medium saucepan, melt the butter over medium heat. Add brown sugar and corn syrup. Stir until combined and bring to a boil.
3. *Boil the Caramel Sauce*: Let the mixture boil for 1–2 minutes without stirring.
4. *Add Baking Soda and Vanilla*: Remove the saucepan from heat. Stir in the baking soda, vanilla extract, and a pinch of salt. The mixture will foam up slightly.
5. *Coat the Cereal and Pecans*: Quickly pour the caramel sauce over the cereal and pecans, tossing gently to coat evenly.
6. *Bake for a Crunchy Texture*: Preheat your oven to 250°F (120°C). Spread the caramel-coated mix onto a parchment-lined baking sheet. Bake for 45 minutes, stirring every 15 minutes for even coating.
7. *Cool and Serve*: Remove from the oven and allow to cool completely. The caramel will harden as it cools. Break into clusters and serve.
