INGREDIENTS
- 1 pound sirloin
- ¼ cup soy sauce
- 2 tablespoons white sugar
- 2 tablespoons cornstarch
- ½ teaspoon ground ginger
- 3 tablespoons vegetable oil, divided
- 1 red onion, chopped into 1-inch squares
- 1 green Peppers, cut into 2.5cm squares
- 2 Tomatoes, cut into eighths
INSTRUCTIONS
Slice the steak across the grain into 1/2-inch-thick slices.
Mix soy sauce, sugar, cornstarch and ginger in a bowl until the sugar dissolves and the mixture is smooth. Add the steak slices to the marinade and toss until well coated.
Heat 1 tablespoon of vegetable oil in a wok or large pan over medium heat and fry the steak strips in the hot oil so that the pan is not overcrowded. Cook and stir until well browned (about 3 minutes), then remove the steak from the wok and place it in a bowl.Repeat with remaining steak, adding more oil if necessary and reserving cooked meat.
Put the fried steak strips back into the hot wok and add the onion. Stir steak and onion until onion softens, about 2 minutes, then add green pepper. Cook and stir the mixture until the peppers turn bright green and soften, about 2 minutes more. Then add the tomatoes. Mix everything together, blend the flavors and serve.
