Ingredients
• 3 cloves of garlic, minced
• 4 ounces sun-dried tomatoes
• 2 tablespoons olive oil
• 1 pound chicken breast, diced
• ¼ teaspoon salt
• ¼ teaspoon paprika
• 1 cup half and half (or use 1/2 cup cream + 1/2 cup milk)
• 1 cup mozzarella cheese, grated (don’t use fresh mozzarella, use grated mozzarella)
• 8 ounces penne pasta (for a gluten-free version, use gluten-free brown rice flour (not pasta))
• 1 tablespoon basil
• ¼ teaspoon red chili pepper
• Cooked pasta needs ½ cup of water or more
• ¼ teaspoon salt to taste
