Baked Sweet and Sour Chicken

INGREDIENTS

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tbsp. Soy sauce
  • 1 tbsp. Garlic powder
  • 1/2 tsp. Sea Salt

 HOW TO MAKE COOKED SORRY CHICKEN

Preheat oven to 350°F and line a 13 x 9 inch baking pan with parchment paper.

Set aside. Season the chicken breasts with salt and pepper.

Place cornstarch in a large zip-top bag and add chicken breasts.Shake to coat well.

Beat the eggs in a shallow bowl. Heat oil in a skillet over medium-high heat until sizzling.

5.Dip the chicken breasts in the egg and add them to the pan. Fry the chicken until golden brown and add it to the prepared pan.

In a medium bowl, combine the sugar, ketchup, vinegar, soy sauce, garlic powder and sea salt and stir to combine.

7.Pour over the chicken and cook for 1 hour, stirring halfway through cooking.

Serve with rice.
