Here’s a simple recipe for Italian Drunken Noodles:

Ingredients:

  • 8 oz wide rice noodles
  • 1 lb Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup red wine
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage and break it up with a spatula. Cook until browned and cooked through.
