☆Ingredients:
1 cup granulated sugar
3 large eggs
1 tablespoon vanilla extract
1 cup sour cream
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
2 cups fresh strawberries, sliced
1/4 cup strawberry preserves or jam
☆Instructions:
Preheat and Prep: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
Prepare Crust: In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
Prepare Filling: In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Fold in the sour cream until well combined.
Bake: Pour the cheesecake batter over the prepared crust in the pan. Bake in the preheated oven for 45-50 minutes, or until the edges are set but the center is still slightly jiggly.
Cool and Chill: Remove the cheesecake from the oven and let it cool completely on a wire rack. Then refrigerate for at least 4 hours, or preferably overnight.
Top with Strawberries: Once the cheesecake is chilled, arrange the sliced strawberries on top.
Glaze: In a small saucepan, heat the strawberry preserves or jam until melted. Brush the melted preserves over the strawberries to create a glossy finish.
Serve: Slice and serve the cheesecake, and enjoy!
