Just made this Triple Crust Peach Cobbler and it’s a revelation! My neighbor, who’s a peach cobbler purist, said it’s the best she’s ever had. Sweet, crispy, and absolutely heavenly!
Ingredients:
4 cups sliced fresh peaches
1 cup granulated sugar, divided
1/2 cup water
1/2 cup unsalted butter
1 1/2 cups all-purpose flour
2 1/4 tsp baking powder
1/2 tsp salt
1 1/2 cups milk
Ground cinnamon, for sprinkling
Instructions:
Preheat your oven to 350°F (175°C).
In a saucepan over medium heat, combine peaches, 1/2 cup sugar, and water. Stir and cook until sugar is dissolved and peaches are soft, about 10 minutes. Remove from heat.
Place butter in a 9×13 inch baking dish and melt in the preheating oven.
In a bowl, mix together flour, the remaining 1/2 cup sugar, baking powder, and salt. Stir in milk until just combined.
Pour batter evenly over melted butter in the baking dish, but do not stir.
Spoon peach mixture over the batter, gently pouring in syrup as well. Again, do not stir.
Sprinkle the top with ground cinnamon.
Bake in the preheated oven for 40 to 45 minutes, until the crust rises to the top and turns golden brown.
Serve warm, optionally with ice cream or whipped cream.
