FRUIT SALAD TO DIE FOR

Perfect for a light treat or a crowd-pleasing side, our fruit salad promises a symphony of tastes and textures that will leave you craving more. Ingredients:
Two cups sliced strawberries.
Two cans sliced peaches (15 oz. each) – reserve the juices from one can, drain the other.
One can mandarin orange segments (11 oz.) – drained.
One can pineapple chunks (15 oz.) – drained.
Two sliced bananas.
One green or red apple – cored and diced.
1 ½ cups washed and drained blueberries.
1 ½ cups washed and halved purple grapes.
One lemon.
3 tablespoons instant vanilla pudding mix (regular or sugar-free).
Directions:
Step 1
First, zest the lemon.
Step 2
Then, drain one can of peaches, capturing the juices in a large bowl. Place the peaches in a separate bowl.
Step 3
After that, stir 3 tablespoons of vanilla pudding mix into the captured peach juice.
Step 4
Next, drain the remaining can of peaches, mandarin oranges, and pineapple chunks. (The juice from these other canned fruits is not needed.)
Step 5
Add all the fruits and lime zest to the pudding mixture, then, gently stir to combine.
Step 6
Finally, chill the fruit salad for at least 30 minutes before serving.
Notes:
Feel free to substitute fruits; raspberries and blackberries are excellent additions when in season. Consider adding coconut flakes for extra flavor.
If available, use fresh fruit instead of canned. Ensure to reserve the juices from one can of fruit to mix with the pudding, and it doesn’t have to be peaches if using fresh peaches.
