Cream Puffs

Ingredients:

For the pie crust:
  • 1/2 cup unsalted butter
    1 cup water
    Pinch of salt
    1 cup all-purpose flour
    4 large eggs
For the vanilla cream filling:
  • 1 complete milk cup
    1/4 cup granulated sugar
    2 tablespoons cornstarch
    2 large egg yolks
    1 teaspoon vanilla extract
    1 cup heavy cream

Methods

Turn the oven to 40 Heat to 0°F (200℃). Line a baking tray with baking paper and set aside.
In a medium saucepan, combine unsalted butter, water, and salt. Heat over medium heat until butter melts and mixture boils.
Remove the pan from the heat and quickly stir in the all-purpose flour until a smooth dough forms.
Return the pot to low heat and cook, stirring constantly, until the batter is slightly dry, 1 to 2 minutes.
Place the dough in a mixing bowl and let it cool for a few minutes.
Beat in the eggs one at a time until the batter is smooth and glossy.
Drop heaping tablespoons of batter onto the prepared baking sheet, leaving about 2 inches between.
Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown and puffed.
Remove from the oven and let the pastry cool completely on a wire rack.

For the vanilla cream filling:

Heat the whole milk in a saucepan over medium heat until just before boiling.
In a mixing bowl, mix together the granulated sugar, cornstarch, and egg yolks until smooth.
Gradually mix the warm milk into the egg mixture.
Return the mixture to the pot and cook over medium heat, stirring constantly, until thickened.
Remove from heat and stir in vanilla extract.
Place custard in a bowl and cover with plastic wrap. Press the foil directly onto the surface to prevent a skin from forming. Leave to cool completely.
Once the vanilla pudding has cooled, add the whipped cream until a smooth, creamy mixture forms.

To assemble:

Halve the cooled puff pastry sheet horizontally.
Spoon or pipe the vanilla cream filling into the bottom half of the pastry pocket.
Place the top half of the pastry on top of the filling.
If desired, dust the cream puffs with powdered sugar.
Serve and enjoy these heavenly cream puffs as a delicious treat.
