Ingredients:
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 4 strips of bacon, cooked and crumbled
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped chives
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup all-purpose flour
- 1 egg, beaten
- Salt and pepper to taste
- Oil for frying
Instructions:
- Boil the Potatoes:
- Place the diced potatoes in a large pot of salted water.
- Bring to a boil and cook until the potatoes are tender, about 10-15 minutes.
- Drain and mash the potatoes until smooth.
- Mix Ingredients:
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, crumbled bacon, parsley, chives, and minced garlic.
- Mix until well combined.
- Season with salt and pepper to taste.
- Shape the Bites:
- Take a small amount of the potato mixture and shape it into a ball (about the size of a golf ball).
- Flatten it slightly to form a bite-sized patty.
- Repeat with the remaining mixture.
- Prepare for Frying:
- Place the flour in a shallow dish.
- Place the beaten egg in another shallow dish.
- Place the breadcrumbs in a third shallow dish.
- Dredge each potato bite first in the flour, then dip in the beaten egg, and finally coat with breadcrumbs.
- Fry the Bites:
- Heat oil in a large skillet over medium-high heat.
- Fry the potato bites in batches until golden brown and crispy, about 2-3 minutes per side.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve:
- Serve the cheesy potato bites warm, garnished with extra parsley and chives if desired.
- Enjoy with your favorite dipping sauce, such as sour cream or ranch dressing.
