Ingredients:
- 3 potatoes
- Water
- 1 onion
- Sunflower oil
- 1 pepper
- 100 grams of cheese (3.5 oz)
- Spring onions
- Salt
- Black pepper
- 2 eggs
- 1/2 tablespoon of sugar
- 500 ml of milk / 2 cups (17 fl.oz)
- 200 grams of flour / 11 tablespoons (7 oz)
- 2 tablespoons of potatoes
- 3 eggs
- Breadcrumbs
- Butter
Instructions:
- Begin by peeling and boiling three potatoes until tender.
- Mash the boiled potatoes to a smooth consistency.
- Slice one onion and sauté it in sunflower oil until translucent.
- Add one sliced pepper to the pan and continue frying until tender.
- Season with salt and black pepper to taste.
- In a separate bowl, beat two eggs with salt and 1/2 tablespoon of sugar.
- Mix in 500 ml of milk and 200 grams of flour until a smooth batter forms.
- Heat sunflower oil in a pan and pour a small amount of the batter to make thin pancakes.
- Fry the pancakes until they turn golden brown on both sides.
- To assemble, serve the pancakes with a generous portion of mashed potatoes, fried onions and peppers.
- Sprinkle 100 grams of cheese and chopped spring onions over the dish.
- Optionally, top with breadcrumbs and bake in the oven with a dab of butter for added crunch.
