- 4 cups diced potatoes (peeled or unpeeled)
- 1 lb (450g) sausage (Italian sausage, breakfast sausage, or your preference)
- 1 medium onion, diced
- 1 bell pepper, diced (optional)
- 2 cloves garlic, minced
- 8 large eggs
- 1 cup milk
- 2 cups shredded cheese (cheddar, mozzarella, or a mix)
- 1/2 cup cherry tomatoes, halved
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 1/2 tsp dried oregano (optional)
- 1 tbsp butter (for greasing the baking dish)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
- Prepare the sausage: In a large skillet, cook the sausage over medium heat until fully browned. Break it up into small pieces as it cooks. Once done, remove the sausage from the skillet and set it aside.
- Sauté the vegetables: In the same skillet, add the diced onion, bell pepper, and garlic. Sauté until they are soft and fragrant, about 5 minutes. If you like, you can also add the cherry tomatoes at this stage to soften them a bit. Mix the cooked sausage back into the skillet with the vegetables.
- Prepare the eggs: In a large bowl, whisk together the eggs, milk, salt, pepper, smoked paprika, and dried oregano.
- Assemble the casserole: In the greased baking dish, spread out the diced potatoes evenly. Then, layer the sausage and vegetable mixture on top of the potatoes. Pour the egg mixture evenly over the entire dish. Sprinkle the shredded cheese on top.
- Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the eggs are fully set and the top is golden and bubbly.
- Serve: Let the casserole cool for about 5 minutes before slicing. Serve warm, and enjoy!
