- 1/4 cup (40g) chia seeds
- 1 1/2 cups (360ml) water (or plant-based milk for richness)
- 1 tsp baking powder
- 1/2 tsp salt

Step-by-Step Instructions
1. Soak Chia Seeds
- In a bowl, mix chia seeds and water. Let sit for 10 mins until gel-like.
2. Blend the Oats
- Pulse oats in a blender until fine (like flour).
- Add baking powder and salt, blend briefly.
3. Mix & Rest
- Combine chia gel and oat flour in a bowl. Stir well.
- Let batter rest for 5 mins to thicken.
4. Bake
- Pour into a lined loaf pan.
- Bake at 350°F (175°C) for 45-50 mins until firm.
5. Cool & Slice!
- Cool 1 hour before slicing (for best texture).
