Flourless Oat & Chia Bread: Healthy, Gluten-Free, and Easy

Ingredients (Makes 1 loaf)

  • 2 cups (180g) rolled oats (certified GF if needed)
  • 1/4 cup (40g) chia seeds
  • 1 1/2 cups (360ml) water (or plant-based milk for richness)
  • 1 tsp baking powder
  • 1/2 tsp salt

(Optional add-ins: cinnamon, raisins, nuts, or honey for sweetness!)

Step-by-Step Instructions

1. Soak Chia Seeds

  • In a bowl, mix chia seeds and water. Let sit for 10 mins until gel-like.

2. Blend the Oats

  • Pulse oats in a blender until fine (like flour).
  • Add baking powder and salt, blend briefly.

3. Mix & Rest

  • Combine chia gel and oat flour in a bowl. Stir well.
  • Let batter rest for 5 mins to thicken.

4. Bake

  • Pour into a lined loaf pan.
  • Bake at 350°F (175°C) for 45-50 mins until firm.

5. Cool & Slice!

  • Cool 1 hour before slicing (for best texture).

Tips

 Crisper crust? Bake an extra 5-10 mins.
Sweet version? Add 1 mashed banana or 2 tbsp maple syrup.

Extra crunch? Stir in chopped walnuts or sunflower seeds.
Storage: Keeps for 3 days at room temp or freeze for 1 month.
