Chicken Parmesan is a true classic and one of those beloved Italian dishes that everyone adores. The chicken boasts a perfect, golden, and crispy exterior while remaining wonderfully juicy on the inside.
Ingredients:
2 chicken breasts
3 tablespoons of butter
1 teaspoon of oregano
Salt and pepper to taste
1 medium onion, minced
1 small jar of sun-dried tomatoes, chopped
4 cloves of minced garlic
1/2 cup of heavy cream
1/2 cup of chicken broth
1 cup of spinach
1/3 cup of grated Parmesan cheese
How to Make Chicken Parmesan:
Season the chicken breasts with salt, pepper, and half a teaspoon of oregano.
In a large skillet, melt the butter over medium-high heat. You can also add a bit of oil from the sun-dried tomatoes.
Add the chicken breasts and cook for 3-4 minutes or until they are browned. Once done, place them on a plate and set them aside.
In the same pan, add one tablespoon of butter to make the sauce. Sauté the garlic, onion, sun-dried tomatoes, and the remaining half teaspoon of oregano.
Now, add the heavy cream, chicken broth, and Parmesan cheese, and stir for 2-3 minutes until the mixture is well combined and smooth. Season with salt and pepper (approximately 1 teaspoon, or to your taste).
Add the spinach and continue cooking until it wilts.
Next, return the chicken breasts to the pan and cook for an additional 2-3 minutes.
Garnish with freshly chopped parsley and serve while hot!
