Ingredients
1 cup chopped pecans
7 tbsp. unsalted butter
1/3 cup granulated sugar
1 cup brown sugar
2 eggs
1 tablespoon pure vanilla extract
2 cups flour
1/2 teaspoon baking powder
Pinch of salt
Half a pecan on each cookie
How to Make Shortbread Cookies
Make sure the oven is preheated to 350° and line 2 baking sheets with parchment paper.
Then mix butter, powdered sugar and butter. Mix brown sugar with an electric mixer. The mixture is slightly creamy.
Then add the eggs and vanilla extract and beat for another 2 minutes. Immediately add flour, baking soda, and salt and stir until well combined.
When ready, use a medium spatula to place the balls on the prepared parchment paper and top each cookie with half a pecan. Bake until golden brown, about 10 to 15 minutes.
