Cheese Stuffed Meatloaf:

Ingredients

For the macaroni and cheese:
2 cups elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded cheddar cheese
Salt and pepper to taste
For the meatloaf:
2 pounds ground beef (or a mix of beef and pork)
1 onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
2 large eggs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
Salt and pepper to taste

Directions

For the macaroni and cheese:
Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes to create a roux.
Gradually pour in the milk while whisking constantly to avoid lumps. Cook until the mixture thickens, stirring frequently.
Reduce heat to low and add the shredded cheddar cheese to the milk mixture, stirring until the cheese is melted and smooth. Season with salt and pepper to taste.
Remove the cheese sauce from heat and stir in the cooked macaroni until well coated. Set the macaroni and cheese aside.
For the meatloaf:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Divide the meat mixture into two equal portions.
Flatten one portion of the meat mixture into a rectangle shape on a piece of parchment paper or foil.
Spread the prepared macaroni and cheese evenly over the flattened meat, leaving a border around the edges.
Carefully place the second portion of meat mixture on top of the macaroni and cheese layer.
Seal the edges of the two meat portions together, ensuring the macaroni and cheese are completely enclosed within the meat.
Transfer the meatloaf to a baking dish or a baking sheet lined with parchment paper.
Bake in the preheated oven for about 1 hour or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
Let the meatloaf rest for a few minutes before slicing.
