Smothered pork chops

Smothered pork chops are a delicious and comforting dish made with tender pork chops covered in a flavorful gravy and served with onions and sometimes mushrooms. Here’s a basic recipe to help you prepare smothered pork chops:

Ingredients:

For the pork chops:

  • 4 bone-in pork chops
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • 2 tablespoons cooking oil (such as vegetable or canola oil)

For the gravy:

  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • Salt and pepper to taste

Instructions:

  • Season the pork chops: In a small bowl, mix together the salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper. Rub this mixture all over both sides of the pork chops.
  • Sear the pork chops: Heat the cooking oil in a large skillet over medium-high heat. Once hot, add the pork chops and cook for about 3-4 minutes on each side, or until they are nicely browned. Remove the pork chops from the skillet and set them aside.
  • Prepare the gravy: In the same skillet, melt the butter over medium heat. Add the sliced onions and cook until they become soft and translucent, about 5 minutes. Add the minced garlic and cook for another 1 minute.
  • Make the roux: Sprinkle the flour over the onions and garlic, stirring constantly for about 2 minutes to cook the flour and form a roux.
  • Add liquids: Gradually pour in the chicken broth while stirring constantly to avoid lumps. Once the chicken broth is incorporated, pour in the milk as well. Continue to stir and cook until the mixture thickens into a smooth gravy, about 5-7 minutes. If the gravy becomes too thick, you can add a bit more milk or chicken broth to achieve your desired consistency.
  • Return the pork chops: Place the seared pork chops back into the skillet, ensuring they are submerged in the gravy. Reduce the heat to low, cover the skillet with a lid, and let the chops simmer in the gravy for about 20-25 minutes, or until the pork chops are cooked through and tender.
  • Season and serve: Taste the gravy and adjust the seasoning with salt and pepper as needed. Serve the smothered pork chops with a generous ladle of the onion gravy over the top.
  • Optional: You can garnish the dish with fresh chopped parsley for a burst of color and added flavor.
