Ingredients
2 3/4 cups plus 2 tablespoons all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs, room temperature
1 teaspoon vanilla extract
3 tablespoons granulated sugar (for rolling)
1 tablespoon cinnamon (for rolling)
Instructions
Preheat Oven: Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat.
Dry Ingredients: In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set aside.
Cream Butter and Sugars: In a stand mixer with the paddle attachment or using a hand mixer, blend the butter and sugars until light and creamy. Stir in the eggs one at a time, mixing just until incorporated. Add the vanilla extract.
Combine with Dry Ingredients: Gradually add the dry ingredients to the butter mixture, stirring just until incorporated.
Form Cookies: In a small bowl, mix 3 tablespoons of granulated sugar with the cinnamon. Use a cookie scoop and your hands to shape the cookie dough into 1 1/2-inch balls. Roll the balls in the cinnamon sugar mixture and place them on the prepared baking sheet, spaced about 2 1/2 inches apart.
Bake: Bake for 8-10 minutes or until lightly browned. Cool for 5 minutes on the baking sheet before transferring them to wire racks to finish cooling.
