Ingredients
For the Crust:
- 1 pre-baked 9-inch pie crust
For the Filling:
- 4 cups fresh strawberries, hulled and halved
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup water
- 3 tablespoons strawberry-flavored gelatin (like Jell-O)
- Whipped cream for topping (optional)
Directions
- Start by pre-baking a 9-inch pie crust and allowing it to cool completely. You can use a store-bought pie crust or make your own.
- In a large saucepan, mash 2 cups of the fresh strawberries. Add the granulated sugar, cornstarch, and water to the mashed strawberries. Stir to combine.
- Cook the strawberry mixture over medium heat, stirring constantly, until it comes to a boil. Reduce the heat and let it simmer for 2-3 minutes or until it thickens.
- Remove the saucepan from the heat and stir in the strawberry-flavored gelatin until it’s completely dissolved. Let the mixture cool to room temperature.
- While the strawberry mixture is cooling, arrange the remaining 2 cups of fresh strawberries in the pre-baked pie crust.
- Once the strawberry mixture has cooled but is still pourable, pour it over the fresh strawberries in the pie crust. Make sure it’s evenly distributed.
- Refrigerate the pie for at least 4 hours, or until it’s set.
- Before serving, you can top the pie with whipped cream for an extra touch of sweetness if desired
