Keto Cream Cheese Stuffed French Toast Roll Ups

Ingredients:

For the French Toast Roll-Ups:

  • 6 slices of low-carb bread (such as keto bread or almond flour bread)
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Butter or coconut oil for cooking

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered erythritol (or any keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. In a shallow bowl, whisk together the eggs, heavy cream, vanilla extract, and cinnamon until well combined. Set aside.
  2. In another bowl, mix together the softened cream cheese, powdered erythritol, and vanilla extract until smooth and well combined. Set aside.
  3. Using a rolling pin, flatten each slice of low-carb bread until it’s thin and easy to roll.
  4. Spread about 1 tablespoon of the cream cheese filling onto each slice of flattened bread.
  5. Carefully roll up each slice of bread with the cream cheese filling inside, similar to rolling up a burrito or sushi roll.
  6. Heat a skillet or frying pan over medium heat and add butter or coconut oil.
  7. Dip each roll-up into the egg mixture, coating all sides evenly.
  8. Place the coated roll-ups seam side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
  9. Remove the French toast roll-ups from the skillet and let them cool for a minute before serving.
  10. Serve warm with your favorite keto-friendly syrup or toppings, such as sugar-free maple syrup, fresh berries, or whipped cream.
