Ingredients:
For the French Toast Roll-Ups:
- 6 slices of low-carb bread (such as keto bread or almond flour bread)
- 2 large eggs
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Butter or coconut oil for cooking
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- 2 tablespoons powdered erythritol (or any keto-friendly sweetener)
- 1/2 teaspoon vanilla extract
Instructions:
- In a shallow bowl, whisk together the eggs, heavy cream, vanilla extract, and cinnamon until well combined. Set aside.
- In another bowl, mix together the softened cream cheese, powdered erythritol, and vanilla extract until smooth and well combined. Set aside.
- Using a rolling pin, flatten each slice of low-carb bread until it’s thin and easy to roll.
- Spread about 1 tablespoon of the cream cheese filling onto each slice of flattened bread.
- Carefully roll up each slice of bread with the cream cheese filling inside, similar to rolling up a burrito or sushi roll.
- Heat a skillet or frying pan over medium heat and add butter or coconut oil.
- Dip each roll-up into the egg mixture, coating all sides evenly.
- Place the coated roll-ups seam side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
- Remove the French toast roll-ups from the skillet and let them cool for a minute before serving.
- Serve warm with your favorite keto-friendly syrup or toppings, such as sugar-free maple syrup, fresh berries, or whipped cream.
