Ingredients:
- 2 tablespoons olive oil
- 1 finely chopped onion
- 2 garlic cloves, crushed
- 450g cooked and shredded chicken
- 1 cup tomato sauce
- 1 cup cream cheese (200g)
- Salt, black pepper, and chopped parsley to taste
- 500g peeled potatoes
- Olive oil for greasing
- 400g grated provolone cheese for sprinkling
Instructions:
- In a pan over medium heat, heat olive oil and sauté chopped onion and crushed garlic for 4 minutes.
- Add the cooked chicken and tomato sauce, sautéing for an additional 3 minutes.
- Incorporate the cream cheese, salt, black pepper, and chopped parsley. Mix well.
- Cut the potatoes into slices using a mandolin and soak them in water until ready to use.
- In a greased medium-sized baking dish, layer the chicken mixture, potato slices, another layer of chicken mixture, and finally a layer of provolone cheese on top.
- Bake in a preheated oven for 30 minutes or until golden brown.
- Remove from the oven and serve your delicious chicken and potato lasagna. Enjoy!
