Creamy Strawberry Delight Icebox Cake

Ingredients:

1 (8-ounce) package cream cheese, softened
1/2 cup powdered sugar
1 pound fresh strawberries, sliced
1 teaspoon vanilla extract
2 cups heavy cream
24 graham crackers

Instructions:

In a large mixing bowl, beat the cream cheese until smooth.
Add powdered sugar and vanilla extract to the cream cheese, and beat until well combined.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until smooth and creamy.
Line the bottom of a 9×13-inch baking dish with a layer of graham crackers.
Spread half of the cream cheese mixture over the graham crackers.
Arrange half of the sliced strawberries on top of the cream cheese layer.
Repeat the layers: graham crackers, cream cheese mixture, and sliced strawberries.
Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
Before serving, garnish with additional sliced strawberries if desired.
