Oatmeal, Apple, and Banana Cookies

Ingredients:

  • 2 cups rolled oats
  • 1 large apple, grated
  • 1 ripe banana, mashed
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, grated apple, mashed banana, dried cranberries or raisins, and chopped nuts if using.
  3. Add the honey or maple syrup, vanilla extract, ground cinnamon, and salt to the mixture.
  4. Stir well until all ingredients are thoroughly combined.
  5. Using a spoon, drop small mounds of the mixture onto the prepared baking sheet, flattening them slightly with the back of the spoon.
  6. Bake for 15-20 minutes or until the cookies are golden brown and firm to the touch.
  7. Allow the cookies to cool on a wire rack before serving.
