Classic Chewy Blondies

Ingredients:

  • 1 cup unsalted butter, melted and cooled
  • 1 1/2 cups light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips or chunks (optional)
  • 1 cup chopped nuts (optional, e.g., pecans or walnuts)

Instructions:

  1. Prepare the Batter:
    • Preheat your oven to 350°F (175°C).
    • Grease and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
    • In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
    • Add the eggs and vanilla extract, and mix until smooth and creamy.
  2. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
    • Fold in the white chocolate chips or chunks and chopped nuts if using.
  3. Bake the Blondies:
    • Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
    • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).
  4. Cool and Serve:
    • Allow the blondies to cool completely in the pan on a wire rack.
    • Once cooled, use the parchment paper overhang to lift the blondies out of the pan and transfer them to a cutting board.
    • Cut into squares and serve.
