- 1 cup rolled oats

Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Dry Ingredients:
- In a large bowl, whisk together the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt.
- Prepare the Wet Ingredients:
- In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, vanilla extract, and unsweetened applesauce until well combined.
- Combine Ingredients:
- Add the wet ingredients to the dry ingredients and stir until just combined. If desired, fold in the raisins or chocolate chips and chopped nuts.
- Scoop the Dough:
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake the Cookies:
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Cool the Cookies:
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
