1 cup dried dates, pitted
1 cup dried apricots
1/2 cup raw cashews
1/2 cup raw almonds
1/4 cup chia seeds (optional for added nutrition)
1/2 teaspoon vanilla extract
A pinch of sea salt
★Instructions
- Process Nuts: In a food processor, pulse the almonds and cashews until finely chopped. You don’t want them to turn into a powder; just a coarse texture.
- Add Fruits: Add the dried dates and apricots to the food processor. Pulse until the mixture starts to come together and resembles a sticky dough.
- Add Chia Seeds and Flavor: If using, add chia seeds, vanilla extract, and a pinch of sea salt. Pulse a few more times to combine.
- Form Bites: With clean hands, roll the mixture into small balls, about 1 inch in diameter.
- Chill: Place the energy bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
- Store: Store in an airtight container in the refrigerator for up to two weeks or in the freezer for up to 3 months.
