Strawberry Chocolate Chip Mousse Cups Recipe

Ingredients:

  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • Optional: a few drops of red or pink food coloring for a more vibrant color

Instructions:

  1. Prepare Strawberry Puree:
    • Place the chopped strawberries, sugar, and lemon juice in a blender or food processor.
    • Blend until smooth. If you prefer a smoother texture, strain the puree through a fine-mesh sieve to remove seeds.
  2. Whip Cream:
    • In a large mixing bowl, whip the heavy cream and vanilla extract until stiff peaks form. If using, add a few drops of food coloring and mix until combined.
  3. Combine:
    • Gently fold the strawberry puree into the whipped cream until fully combined.
    • Fold in the mini chocolate chips.
  4. Assemble:
    • Spoon the strawberry mousse into individual serving cups, filling each cup about 3/4 full.
    • Tap the cups gently on the counter to remove any air bubbles and smooth the top.
  5. Chill:
    • Refrigerate the mousse cups for at least 2 hours, or until set and chilled.
  6. Serve:
    • Serve chilled. You can garnish with additional chocolate chips, fresh strawberries, or a dollop of whipped cream if desired.

Variations:

  • Fruit Variations: Substitute strawberries with raspberries or blueberries for different flavors.
  • Add Crunch: Add a layer of crushed graham crackers or cookies at the bottom of each cup before adding the mousse for added texture.
  • Alcohol Infusion: Add a tablespoon of liqueur, like Chambord or Cointreau, to the strawberry puree for an adult twist.

This strawberry chocolate chip mousse is a delightful and easy-to-make dessert, perfect for serving at parties or as a sweet treat. Enjoy!
