Fluffy Cloud Cake
Ingredients:
- 5 eggs
- 16g baking powder
- 200g powdered sugar (approximately 1 1/2 cups)
- 200g butter (approximately 1 3/4 cups)
- 50g potato starch
- 300g flour (approximately 2 cups)
- a pinch of salt
- 150g yogurt (approximately 1 cup)
- vanilla extract
Instructions:
- Begin by preheating your oven to 180°C (360°F) and greasing a 22cm cake mold.
- In a blender, combine the eggs, baking powder, powdered sugar, butter, potato starch, flour, salt, yogurt, and a splash of vanilla extract.
- Blend the ingredients on high speed for about 3 minutes or until the batter is smooth and well combined.
- Pour the batter into the prepared cake mold, spreading it evenly.
- Place the mold in the preheated oven and bake for approximately 40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and allow it to cool in the mold for a few minutes before transferring it to a wire rack to cool completely.
- Serve and enjoy your deliciously fluffy cloud cake!
