HOMEMADE TAPIOCA PUDDING
Homemade Tapioca Pudding – Of all the desserts on the market, tapioca may be the most controversial. Some love it very much, some can’t even stand to see it. Maybe because I grew up with the home version, but I definitely fall into the “like it” category. It’s a classic dish that’s creamy, sweet and delicious. The first bite always brings joy to children.
Although you don’t see people doing this very often these days, I firmly believe that home is the only way. Store-bought pudding cannot compare to the best homemade makeup. Luckily, this is very easy to do!
INGREDIENTS
½ cup small tapioca pearls
4 cups milk, whole or 2%
¾ cup white sugar
3 eggs
1. Wash the tapioca pearls and pour into a small bowl and cover with water. Let it sit for 45-60 minutes.
2. In a large pot, add the milk and the first ¾ cup of sugar. Boil the mixture over medium heat. When bubbles form, add the tapioca beads and reduce the heat. Cook, stirring frequently, for another 15-20 minutes or until the pearls are tender.
3. While the figs are cooking, beat the eggs and the remaining 1 cup of sugar in a large bowl.
4. Slowly pour the hot mixture into the eggs, about ⅓ cup at a time, stirring constantly. Continue until some of the hot mixture is poured into the egg.
5. Slowly pour the contents of the egg cups back into the pan while stirring.
6. Bake for another 3-5 minutes or until the crusts begin to rise (they will continue to rise as they cool).
7. Remove from heat, add vanilla and mix. Transfer to a plate and refrigerate until serving
