Ingredients:

  • 4 cups frozen corn (about 20 ounces)
  • 1 cup shredded sharp cheddar cheese
  • 4 ounces cream cheese, softened and cut into cubes
  • 1/4 cup butter, cut into cubes
  • 1/4 cup milk or heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped green onions (optional for garnish)

Instructions:

  1. Prepare the Slow Cooker:
    • Lightly grease the inside of your slow cooker with cooking spray or butter.
  2. Combine Ingredients:
    • Add the frozen corn, shredded cheddar cheese, cream cheese, butter, milk, garlic powder, and onion powder to the slow cooker. Stir to combine the ingredients.
  3. Cook:
    • Cover and cook on low for 3 hours, stirring occasionally to ensure the cheese and cream cheese melt evenly.
  4. Add Bacon:
    • About 10 minutes before serving, stir in the crumbled bacon. Continue cooking for the remaining time.
  5. Serve:
    • Once the corn mixture is hot and creamy, taste and adjust seasoning with salt and pepper if needed.
    • Garnish with chopped green onions if desired.
