vanilla Custard Bars

ingredients;

  • 1/2 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, chilled and diced

For vanilla pudding filling:

  • 1 1/2 cups whole milk
  • 1/2 cup cream
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon cornstarch
  • 1 tablespoon vanilla essence
  • pinch of salt

Instructions

Step 1: Preheat the oven and prepare the frying pan

Preheat oven to 350°F (175°C).
Grease or line a 23 x 23cm square baking tin with baking paper. Leave the excess behind so you can easily remove it later.

Step 2: Make the crust

In a large mixing bowl, combine all-purpose flour, powdered sugar, and salt.
Add the cold cubed butter to the dry ingredients.
Using a pastry cutter or your fingers, fold the butter into the dry mixture until it resembles coarse crumbs. Press the crumbly mixture firmly and evenly into the bottom of the prepared baking pan to form a crust.

Step 3: Bake the crust

Place the baking sheet with the dough in the preheated oven.
Bake for 15-20 minutes or until the edges of the crust begin to turn golden brown.

Step 4: Make the custard filling

Add whole milk, heavy cream, and granulated sugar to a pot and mix.
Heat the mixture over medium heat, stirring frequently, until hot but not boiling. In a separate bowl, whisk together the eggs, cornstarch, vanilla extract, and a pinch of salt until well combined.
Slowly pour the hot milk mixture into the egg mixture, stirring constantly to prevent the eggs from curdling.

Step 5: Assemble and bake

Pour custard mixture over partially baked dough.
Return the pan to the oven and bake for an additional 25-30 minutes, or until the custard is set and the top is lightly golden.
The cream should jiggle slightly when you shake it gently. Step 6: Cool and serve

Cool the custard bars in the pan on a wire rack.
Once the bars are completely cool, place them in the refrigerator for at least 2 hours until the custard sets.
Once the bars are set, use the parchment paper overhang to lift the bars out of the pan.
Cut the bar into squares or rectangles of the desired size.
Serve velvety custard bars and enjoy creamy, sweet goodness in every bite.
