Instructions for Making Church’s Honey Butter Biscuits
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Combine dry ingredients: In a large bowl, sift together the all-purpose flour, baking powder, baking soda, sugar, and salt.
- Cut in the butter: Using a pastry cutter or your fingertips, cut the cold cubed butter into the dry ingredients until the mixture resembles coarse crumbs. The pieces of butter should be pea-sized.
- Add wet ingredients: Make a well in the center of the flour mixture and pour in the cold buttermilk and 2 tablespoons of honey. Stir until just combined; the dough should be sticky but manageable.
- Turn out the dough: Lightly flour a work surface and turn the dough out onto it. Gently fold the dough over itself 2 or 3 times to create layers. Do not overwork the dough.
- Cut out biscuits: Pat the dough into a rectangle about 1 inch thick. Using a biscuit cutter or a glass, cut out the biscuits. Do not twist the cutter; press straight down and lift straight up for even rising.
