Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled and halved
  • 1/2 cup granulated sugar (adjust based on sweetness of strawberries)
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon lemon juice

Instructions:

Prepare the Crust:

  1. Mix graham cracker crumbs, melted butter, and sugar in a bowl until well combined.
  2. Press the mixture into the bottom of a 9-inch springform pan, forming a tight, even layer.
  3. Chill the crust in the refrigerator while preparing the filling.

Make the Filling:

  1. Preheat oven to 325°F (160°C).
  2. Beat softened cream cheese in a large mixing bowl until smooth. Add sugar and vanilla extract, mixing until well combined.
  3. Incorporate eggs one at a time, mixing on low speed and scraping down the sides of the bowl after each addition.
