INGREDIENTS:

  • 1 pound Swedish meatballs (homemade or store-bought)
  • 8 ounces wide egg noodles
  • 1 cup sliced mushrooms
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 ½ cups beef or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese
  • Fresh parsley for garnish

INSTRUCTIONS: 

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, brown the Swedish meatballs until golden on all sides. Remove them from the skillet and set aside.
  4. In the same skillet, sauté the chopped onion until softened. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
